My lovely pear tarte

Since we have friends coming over tonight and since I'll be in Milano working all afternoon I started to prepare the dinner already. This ricotta, chocolate and pear tarte is just fantastic! It's so easy to make and you can prepare everything in advance. Before serving it you just brush over an egg yolk and put it in the oven. Your guest will be amazed to get an oven warm tarte made alla minute ;)

This is how you do it :

Make a cream out of 150 g of sweet almond paste, 250 g of ricotta cheese and 2 egg yolks. Cut dark chocolate in small peaces and add them to the cream.

Spread the cream over a puff pastry and add 2 pears cut in thin slices.

Before putting it in the oven cover it gently with an egg yolk (you can use a soft kitchen brush).
Let it go in the oven for about 20 minutes and 175 degrees.
